Professional bakers prefer tin springform pans over the dark non-stick pans as the dark pans tend to bake cakes too quickly at the outer edges. Plus, tin pans can be tossed in the dishwasher!  The non-stick pans should never be run through the dishwasher as the heat destroys the coating, as does scrubbing destroy the coating.  With a tin pan- no risk of that coating material leaching into your baked goods!  

For a smooth release, simply spray the collar of the pan with a baking release spray or even good old vegetable oil cooking spray. You will NOT need to run a knife around the cheesecake- never leaving an unattractive edge!  Fits perfectly in the 9" Easy Bath Cheesecake Wrap!  And both fit perfectly in the 12" waterbath!
