Professional bakers prefer these heavy duty tin springform pans over the dark non-stick pans as the dark pans tend to bake cakes too quickly at the outer edges. Plus, these pans can be tossed in the dishwasher. The non-stick pans should never be run through the dishwasher as the heat destroys the coating, as does scrubbing, and of course, no risk of that "non-stick" coating material leaching into your baked goods.
This 7" springform pan fits perfectly in the 7" Wrap. It is ideal for baking in a pressure cooker. Use the Sling to lower and raise the Wrap and Pan in and out of the pressure pot. Or bake in standard water bath with the protective 7" Wrap.
For a smooth release, simply spray the collar of the pan with a baking release spray or even good old vegetable oil cooking spray. You will NOT need to run a knife around the inside- never leaving an unattractive edge.
